How to and what the things we need to understand in data sheet?
That's a very general question and I'm not sure what you mean.
The things that are important in a data sheet often depend upon the devices's application.

For example:
If you are using an op amp in a high frequency application, than the gain-bandwidth is of interest.
If you are amplifying very small DC signals, than the input offset voltage is of interest.
If you are amplifying tiny AC signals, than the noise level is of interest.
If you signal source has a high impedance, than the input bias and offset current are of interest.
If you are operating from a single supply, then it's performance under those conditions are of interest.
Etc.

You need to understand everything in a datasheet. And not just that, either. There are things you need to know that are not explained in the datasheet, so you understand why certain values are used in the datasheet.
