Power is not consumed, energy is consumed. Are you trying to calculate power or energy? Your misuse of your units indicates you do not understand the meaning of the two.
Edited to add: Power is energy produced ir consumed consumed per second. 1 Watt is one Joule per second.
Power is measured in watts (typically) = volts x amps.
if power x time is the ENERGY required. A watt x one-second is a joule. However, for the electric company, watt x hours or 1000 Watt x hours or kWh
Im not sure where the hours come in from your data. If you are measuring them over a one hour period, then you need to integrate by adding each reading in your 1-minute time slice. The resulting sums of 1-minute average datapoints can be added to get kWh. Killowatt*Hours, not kilowatts/hour.
