I'm using a UART (using a DMA driver @460800 baud) to talk over Ethernet. There are still plenty of uses for a UART outside of being a debug channel.

My current home project for the FM80 MATE monitor uses three uarts out of a possible five on the chip, SPI for the LCD and CANBUS-FD on an 8-bit PIC18 controller. MODBUS, FM80 MATE weird serial bus and serial to USB to upload data to the Linux server.
