I'd say that it's the day of the Declaration of Independence that is the most renowned, followed by the Batalla de Puebla, which is most commonly known as Cinco de Mayo ... as you've just mentioned. Believe it or not, the celebrations of Cinco de Mayo are way bigger in the US than in Mexico itself! ...

Neither one of us are what you'd call "avid bird-watchers" ... so I'm gonna take your word for it. And I'm not surprised that you don't see them usually where you're at. Bird species change dramatically between different terrains.
For instance, my brother owns a nice cabin about an hour drive from where I live, and the types of birds that one sees up there look like they belong to a different continent sometimes, to say the least.
