Given the vague information, you could look through the Digital-Analog Conversion section of the e-book (http://www.allaboutcircuits.com/vol_4/chpt_13/index.html)

As for ADC spec sheets, you need to have an ADC manufacturer in mind. If you want advice on this, I would advise that you tell us a little more about your application.
