Check various temperature sensors from Texas Instruments TMP series, or ADI's TMP/ADT series.
There are bound to be example circuits. In fact, look at the TMP122 from TI; it has an eval board that you can order.

 

Setpoint or proportional control? What is being controlled (source of the heat/cooling)?

simple thermistor and opamp
bimetallic switch
expansion switch
PID control
manual

 

You will find lots of circuits and application notes if you go to http://www.linear.com , http://www.analog.com , and http://www.national.com , and do searches for "thermometer" , and "temperature sensor" , for example.
