For small projects with a 5v drive signal, the 2n7000 is very popular, and useful to become acquainted with them.
Depends on the project and what device is being switched.

2N7000 seem to be the least expensive and are reasonable if you're working with at least a 5V supply.

You'll see the IRF540 in lots of projects. I keep a bunch on hand. But it's old and you can likely find better ones.

 

@Kelvin Lee The IRF540 also comes in a logic gate version (IRL540) if working with 5v.
