You can use just the diodes, but you will have less maximum distortion available, based on the setting of the GAIN 1 pot. Op-amp U10 gives you a large amount of adjustable over-drive to increase the amount of clipping distortion you get from the diodes. And, add a series resistor (i.e 470 ohm) before the diodes to protect the output of U1 from over-current.
