I'm looking for a DPST switch for my bike lights. Ideally as small as possible and waterproof - any links or suggestions very welcome ...

There are
Water-Tolerant,
Water-Resistant,
and Water-Proof,
Switches readily available,
it just depends on how much You want to spend.

Are You referring to a Bicycle, or a Moped, or a Motorcycle ?

The biggest problem that You have is the mounting-method.

You should probably go with a Motorcycle-Accessory-Switch,
but you're not likely to find one that is Double-Pole.
However, You will find plenty of Motorcycle-Switches that are designed to control
Tail-Lights and Head-Lights separately.
