Could anyone please give me some links to very good and self-explanatory reading material (preferably in PDF) on the following: fourier transforms; laplace transforms; z-transforms.

 

I'm not aware of PDFs of these transforms (although I suspect some exist), however I would recommend if you get a chance to have a look at either Advanced Engineering Mathematics by Kreyzig (general engineering application of the transforms) or Signals and Systems by Oppenheim and Wilksky (very detailed application of all transforms with a focus on electrical and communication engineering - highly recommended).

I would also suggest you venture over to the relevant Wikipedia article on these transforms.
