Apart from the behavior regarding circuit logic, what characteristics should be taken into account when a certain component is chosen in a real circuit? I'm interested in volatage comparators, inverters, AND gates and 2:1 multiplexers. I know that not all comparators (and inverters, etc) are created equal, so what are the (main) specifications one need to choose each one of those components?

It is pretty much always true that the choice of component is driven by the specific requirements of your design.

Among the things to consider are:

Available supply voltage
Frequency response
Mechanical packaging
The load being driven

These are but a few of the things to keep in mind.
