How do I work out the temperature when using a LM35 as the sensor? I have limited resources but do have a oscilloscope and a dvm.

You make a bath of ice and water to measure the temperature.
Then you boil some water and measure that.

 

Then you boil some water and measure that.

And you know the boiling point of water at the altitude you are located.

 

And you know the boiling point of water at the altitude you are located.

Close enough for a 1st approximation, and sanity check.

Based on the above, just a proper reading (in fact, an average of many) allows you to correct any future ones using a proportional difference.

This was my very first project: to collect temperatures and display them on 7segment digits for a green house. The whole controlled by the venerable PIC 16C57.

To ensure the performance I implemented the recommended circuit in the datasheet and used an LM34 to provide a constant current of around 0,5 mA or less IIRC.
