The way I understand it is that the difference between FSK and GFSK is that the latter uses a Gaussian filter to decrease the frequency spectrum present in the pulses. This has the effect of smoothing the leading and falling edges of the pulses so the main component that remains is more the fundamental frequency and less higher order harmonics, which would always be present in a perfectly rectangular wave with no filtering. That reduces the effect of interfering with other channels and probably with other devices.
Perhaps a slightly detuned band pass filter would fit this application although I have not researched that.
