I ended up using this configuration:
I followed the instructions for setting the digital panel meter to read in volts (rather than millivolts), and removed the decimal point jumper so there would be no decimal point (0000 instead of 000.0). This means the digital panel meter is essentially displaying the input voltage in centivolts (which is also the temeperature of the LM35 in degrees Celsius).
It is working properly, and with only one day to spare.
