I want to build a digital synth but have no clue which controller i should use.

Sounds like an interesting project. I would ignore the choice of controller for now.
Start with drawing a block diagram of all the key components required for your synth.
After that, write out the specifications for the synth. Having done those two, you will get a better picture of the requirements of the controller.
