A lot of the parts in my project are designed for 20amps and the output max of the supply is 30a at 5v. I started to look into a tiny circuit breaker switch to trigger after 5vdc at <20amp but I have found nothing but breakers designed to go off at something like 120v at 20amp. And I know for sure that those will not work for my circuit. If only there was such thing as a button reset polyfuse or something of the sorts. What knowledge am I missing here?

Try a simple Google of DC Circuit Breakers and here are some from McMaster Carr Industrial Supply. Low voltage DC circuit breakers are pretty common.
