This is not such a good idea, as the ignition secondary voltage will become extremely high, and quite possibly cause expensive damage to the ignition system.pull some plug leads and it won't start.
There is also the problem of the unburned air/fuel mix being pumped into the exhaust system while test-cranking the engine; this can result in a catalytic converter fire or a burst catalytic converter/muffler on a subsequent start attempt with the ignition wires reconnected.
Disconnecting the fuel injector harness would be a much safer option.
