Alternator Voltage Regulator

Hello, I just embarked on a project to control the alternator voltage of a exercise bike. I have attached a picture about the alternator the bike has.
The bike has a control panel which has many functions. One of them is to control and change the resistance level through numeric keys. That is, to make the pedaling either lighter or heavier. The bike also has an alternator control board. I have attached another picture about the main circuitry in general. Also, a picture of the alternator control board.

This is the point:

I want to get rid of the console which has many functions, and just build a simple circuit to control the alternator voltage using a potentiometer. That is, to change the resistance level by using a circuit with a pot. I do not want the other functions, that is why I want to remove the console and design a simple circuit which allows me to vary the resistance of the pedaling. I was thinking of a PWM, but I am not sure. I would appreciate your suggestions about this.

Thank you.

If you need additional information, let me know and I can provide it.
