Is there a way I can take a 24VAC output transformer and make it drop to 4 different voltage "legs" [5 total drops]?
I'd like to use a single barrier to pull off: 24, 18, 12, 9 and 5 VAC.

What is the voltage tolerance for each of the five voltages?
What current do you need at each of the five voltages?
Are you open to ordering a custom transformer having multiple taps?
If you are able to rewind the transformer with taps at the desired voltages then certainly it can be done. That is often done with custom built transformers, it is a valid scheme that can work very well.
