3 phase stator output test

Hi. i have a small question.
normally when we test a 3 phase motorcycle stator we use those 3 stator wires and measure the AC volts output while the engine is running. for instance if we name the wires as A B C then we measure

A to B
B to C
A to C

but in this video he uses a different method which is kind of hard to understand. he puts the black probe to the ground and the red probe to the stator wires respectively. apparently he gets the correct AC volts readings. so when it comes to AC volts, i don't see a direct connection in between the stator wires and the motorcycle ground. not sure if i'm missing something. thank you :)
