I need to find out how much temperature does it need the i7-8750h to remove the soldering and how much temperature does it need the i9-9980hk to get soldered

 

Lead-free non-eutectic solder has a melting point at about 250 °C. I would imagine that it would need to be above that for reliable removal and replacement of a large BGA chip. I hope you're not going to attempt this without the proper equipment.

No, I've never tried to do that, but most contract assembly houses have access to rework equipment.
