You could use two of the LT1084's , if the transformer has two separate 12 Volts windings.
You could stack the two supplies then.

It is also important that you dimension the transformer correct. Do not get any transformer before conferring with us. If you want to draw 4 ampere continuous. A 4 ampere rated transformer will not do.

Correct, that is the best way to go. Just make sure the negative reg is electrically isolated from the heatsink.

If you are feeding it into a FWB/capacitor to get the unregulated DC, you will need a transformer rated for about 7A RMS to supply 4A DC load current. With 12V output, the regs need at least 15V. I think you need a transformer rated for 14VAC secondary to allow a bit for ripple and load regulation effect. That would be a transformer with two 14VAC separate windings, each rated for 7A RMS.
