POE microcontroller, lots of 'close but no cigar'

Is there a poe add on to esp/at32/arduino/other, such that you stick the two on the end of a cat5/6 poe line and then have an ip you can query for n sensor data? Thinking sensor only, so low power signal only, no motorized / heating or anything.

Have googled this plenty, quite a few 'nearlies'. Some things will have network stack, but need local power. Some will provide power, but seem to really be 'no comment' about network signal. Some are obsoleted, and some are out of stock because no demand - everyone solves this with wifi/ bluetooth and local power. One I found required 2 cat5 cables, one for power and one for signal.. ..not what I had in mind.

I have plenty of network cable and new/ opened up cable runs, I can run cable anywhere. If I run power I really need and external electrician quote/work, for compliance and auditing. I wanted to just get data (temp, humidity, presence, light level (and later - flow rate)) across a building, wires only. My maintenance team don't have capacity to regularly change batteries on wireless and confirm function for inaccessible sensors. My working environment is radio-noisy, I don't have a lot of faith in non-wired options.

I have have 'research budget' for small internal things, which are not prod, but parallel to prod. I am thinking of any of the poe chips on the RJ45 lines delivering to some bus which supplies to at32/arduino/teensy and it's associated network addon, and can feed to sensors that need it. Am I just getting imaginative?
