Most useful tools you have for soldering?

An X-acto knife with the common no. 11 blade.

I use the third hand PCB holders and with multiwire cables I like to use soft copper wire or old bread wrapper ties to secure wires in place and hold them while I solder.

The last Sharpie pen I bought won't write on non absorbent surfaces. I had to go back to the supermarket and get one of their cheap own brand solvent based permanent markers.

They had Pentel which are pretty good - some people use them for making good on imperfect etch resist. But I wanted chisel point and they only had bullet.

What kind of table do you use?
I have a particular type of table I use for my projects. I have room and like large tables so I make my own. I build computers and find the following useful. It will give you an 8 foot by 33 inch surface with 4 large drawers.

4 x 8 sheet of 3/4 inch plywood cut to 33 inches x 96 inches
4 x 8 sheet of 3/4 inch particle board cut to 33 inches x 96 inches
2 Two Drawer Steel filing cabinets

Place the filing cabinets as stands for your tabletop, put down the particle board with the plywood surface on top. Any moisture on particle board turns to mush so the plywood goes on top. I make the tabletop thick for a couple reasons; they don't bend and I've got swing arms clamped to them with monitors attached. I've also made book shelves on some of these for parts and tools. I've found 4 feet deep tables are too deep when placed against a wall, so I settled on 33 inches. I've taken a automobile tire inner tube and cut it into pieces. The rubber sheets keep the tabletops from sliding on the metal file cabinets when placed between them.

The file cabinets can be bought new or from 5 to 20 bucks at a thrift store. You can get by with one tabletop if you want. Habitat for Humanity has stores where they sell left over building supplies, you might get a formica tabletop (a countertop) there for very cheap.
