Hoppin John
Creole bastardization of Pois Pigeon (African pigeon peas otherwise know as black-eyed peas)
1 smoked Hog Jowl diced bite sized (don't skrimp on the meat)
1 medium onion chunked up
1 green pepper chunked up
2 cans black-eyed peas undrained
1 can long grain uncooked rice
half can of water
several good turns of the black pepper grinder
good dash of red pepper flakes
Heat up the jowl till it starts to get translucent (don't fry it) in a cast iron pot, throw in the vegs till they start to soften, add all the rest and cover simmering until rice is done. Serve with cornpone and collards and you are guaranteed a Happy and Very Prosperous New Year! Iffen you don't eat it you will be sad and broke all year...
