Hall Effect Sensors vs. Hall Effect Switches - is there a difference?

I'd like to measure a range of voltage, based on the proximity of a magnet to a Hall Effect Sensor.
Most of what I am seeing online suggests that they simply go high or go low, depending on whether a threshold has been exceeded.
Are there Hall Effect Sensors that produce a wide, sensitive range of voltages with relation to a magnetic field? How can I find those and differentiate them from the other models out there?

Sounds like what you want is not a Hall Effect Sensor, but perhaps a Hall Effect Magnetometer.

Digikey has 3-axis units for about $4. But they may not be a match for the field strengths you have in mind.

Names like Honeywell, Allegro and Texas Instruments come to mind. Then as suggested look for names like Linear or Radiometric. Hall effect sensors come in a wide variety of flavors.
