I am fixing this rev hand grip of an electric motorcycle, can someone explain the functions of 3 colored wire and the black object?

There's really no way for anyone to know based on a picture.

My best guess - and that is all it is, a guess - is that it is essentially a potentiometer and the red and black wires are power/ground and the green wire is the wiper. But there are a lot of ways that the manufacturer could have implemented a throttle and the colors of the wires may be nothing more than the colors that the vendor of that part happen to use that month.

Green wire is wiper? what is the wiper? first time i hear it

My guess is that the black object is a Hall effect sensor which responds to a changing magnetic field as the throttle grip is rotated.
Does that object have any identifying markings on it?

yeh, It is Ic hall sensor, correct.
Can you shortly give how the throttle grip work?

Have you got the components around these wires? Looking at those may give clues.
NOTE: The battery on you bike is a potential bomb, so take care.

1 wire is 5volt, 1 wire is ground, the black object is IC hall sensor, the other wire I don't know?
Can you shortly give how the throttle grip work?

The microcontroller (or equivalent circuitry) would apply appropriate drive signal(s) to the motor, depending on the motor type. Is the motor a BLDC one?

I suggest you search for one.
yep, it is blushless Dc motor, do you know where to find more materials about this, I like to understand in detail.

Why not other values but only +5 volt wire?
Because the Hall device or microcontroller (or whatever) needs a 5V supply. You should check the datasheet for any identifiable component to see what its operating requirements/parameters are.

Ic hall sensor, how does its work and how can it controls speed of motor?

How a throttle control speed ?
The microcontroller controls the application of current pulses of appropriate amplitude, frequency and order to the motor coils. Ask ChatGPT for further details or search Youtube for instructional videos.
