Will this 12v supply be damaged if its used in a circuit were 2amps are chopped with a MOSFET into a load? It says it can supply way more than 2 amps.

Maybe its not made for switched loads.

Typically a power supply has a large filter capacitor on the output, which will smooth the sudden changes in current from the chopped load.
