can I used to detect the small crack on egg using HCSR04 Ultrasound sensor?

No. The ultrasonic frequency is too low and the transducer is the wrong type.
To detect a crack this small you need a transducer operated at several Mega Hertz. This is possible -- Diaganostic ultrasound companies do this all the time.

For experimentation, using PVDF (Kynar) film transducers might work. I seem to remember reading long ago that they were used at a frequency of 500 MHz. :eek:

Are the eggs for eating? Are they chicken or duck? Have they been candled? How many and how often do you need to do the check? There are sensitive, non-automated ways.

To detect a crack this small you need a transducer operated at several Mega Hertz.
I should have mentioned... Vibration at these high frequencies do not go through air. Even in water, the ultrasound is attenuated at the rate of about 1dB/cm/MHz.
