The 1970s Motorola MDA3500 used in a pinball coil circuit measures open so I want to replace it but can I use a higher voltage version without issues? Or is there another substitution available?

Yes. If the voltage rating is greater than the peak voltage in the circuit, and the current rating is greater than the current in the circuit it will be fine.
I do note that it is VERY unusual for a bridge rectifier to fail open-circuit. They inevitable fail short.

Just to be clear. you have used both Amperes (A) and Ampere-hours (ah) interchangeably. They are not the same thing.
