So did you recover the portions of the failed TC to discover why the wire broke? If the break was from flexing at one point, it will certainly happen again, which I hope that you can avoid. Of course, knowing how to do the replacement you could do it yourself next time.
And it certainly did appear to be a fatigue flexing break from what I saw in the photo.

Glad it worked out for you. Never saw such an oven. Pretty cool. Then too I haven't been in a restaurant type kitchen in decades. :)

well the new independent service man called,He had the part tc cable, so we did not have to rip in from the front or the top as it shoves in from the front and was not joined to anything,200 euro for the call and parts and I can ring him anytime with a question,nice to meet someone genuine.

If you still have that failed thermocouple, and are really ambitious, it should be possible to determine the type of device and possibly purchase a replacement part that has stranded wire extension leads. Or possibly just longer leads so that you can create a coiled section to do the flexing. about two feet (2/3 meter) in a close wound helical wrap around something about 3/8 inch diameter, that is removed after wrapping. That sort of arrangement has a much longer flex life.
And now you know how to open and repair the stove so you are much ahead of the situation.
