I found an old infrared controller from on old helicopter and disassembled it. I identified everything on the PCB except the the components on the right and left hand side, which are the control functions. Is there anything I can take out of this controller and use for experimental purposes?

Those little joysticks are useful and hard to find, they are worth keeping. There's one or more IR LEDs at the front, and likely to be a 5v regulator 3pin IC in there too. The rest is junk unless you want to go to the trouble of desoldering those switches.
