I am building a sub electrical room with a 1000A panel that will be feeding sub panels thorought the building, If my sub-panels are 120v 60hz, Do I need two CT's on my to meter my sub-panel or can you stick both hots through one CT?

Are the sub-panels all fed from the same phase?

If yes, then provided the CT has the correct current range and the two hot conductors will fit through the CT window then it should be OK.
