Thermistor & its vice versa in single circuit

Hi all,

I am very new this forum, my question may look silly for many :(

I am looking for a circuit to control the OVEN operation, that has a burner and a air circulation fan.

When i switch ON the oven, both Burner and the fan will start. Both should be in operation till 200C. At 200C burner should stop and fan should continue its operation. As burner is down now, temperature will come down gradually. At 180C fan should stop its operation. Please suggest me if there are any readymade product available in the market or some ideas on how to do this will help me a lot.

My first idea is that all retail ovens come with a thermostat. Buy a replacement part for an oven.

If Klixon makes one, it would be part number L400-20 (in Fahrenheit).
(That would be a "one temperature only" switch.)

A third way would be a thermistor and an LM723 chip to make a thermostat from scratch, if there are thermistors that survive 200C.
