You suggested you were going to use a MAX chip.. namely, I'd assume, the MAX232....
There are lots of projects that utilize the MAX232 chip, so there's no shortage of examples...

The LM35 outputs a linear voltage 10mV per °K.

Are you going to use the PIC on-board ADC?

Have you considered using the Maxim/Dallas one-wire temperature sensor such as the DS18B20? More software but less analog complexity.
