How do you intend to use "ultrasonic" with and ADC? A lot more detail would help in spec'ing an appropriate uC.

Have you got a good idea of the highest frequency of interest?

 

the ultrasound frequency maximum range is 150 KHz which suports ultrasound bat calls.

 

The upper limit of echolocation calls may be less than the 150 KHz figure. Sampling theory suggests that the conversion needs to be done at least twice as fast as the upper frequency of interest, and even then the reproduction can be iffy. Requirements for memory to hold the data can be a challenge as well.
