1.can anybody suggest me a software similar to labview,which is having equally good GUI...the evaluation mode of my labview got expired and i dont want to use MATLAB.
2.from where can i learn proramming microcontrollers?
any good website or pdfs......please suggest....

i can answer the second question.

you didnt state what type of microcontrollers you want to use, so im going to suggest using a PIC.

i think a lot of people here will suggest you getting a kit, such as a "PICKIT." although i do not have experience using one, they do provide step-by-step tutorials. in addition, you can always come to us if you decide to take that route and have some troubleshooting errors.

the book "PIC Microcontroller - An Introduction to Software and Hardware Interfacing" is extremely easy to read, and it will spoonfeed you information. torrent it =)

and you might just want to google PIC tutorials, there are a ton of good ones out there. you choose the one that best suits your fancy
