Sampling Noise to Estimate Mean and Variance

I am doing a paper design of an optical receiver along with a circuit to measure the signal and then calculate an estimate of the mean and variance of the noise associated with a logical one and zero. The signal is NRZ OOK modulated and the symbol and data rate is 100 Mbps. I also assume the noise is Gaussian and is band limited (a third order low pass Butterworth filter is used in the receiver).

The question I have is when measuring the noise to calculate an estimate of the noise mean and variance, should I sample at the Nyquist rate? If so, what is the relationship between Nyquist sampling theorem and the estimation of the mean and variance?
