I want to use a IFID module to make an access control system to my school project.

I observed some RFID r/rw transponders(in 125khz range) from internet but those have complex methods to write a tag number to the transponder chip.

I need only to demonstrate the RFID mechanism by using simple design.Im try to use below IC to my rfid reader circuit.

I want to know,

1. What is the easiest transponder type I can use? like,
EM4105(r/w)
EM4069(R/W)
EM4050
EM4150
EM4070
EM4170
or any other

2. If 'read/write' transponders easy to handle than 'read only' ?

Of course the read-only transponder will be simpler since you don't need to program it.

Do you want to make both the reader circuit and the transponder circuit? Otherwise if you only care to make one side at this point, you can buy some inexpensive RFID tags or a serial-output reader device.
