I'm referring to the following image:

This is a general op amp, I was wondering what the gain would be if R2 didn't exist, and it was just a feedback loop with r1?
I assume that it's the same as a unity gain buffer right? So Av would just be 1?

you are correct--Av = 1

 

The formula tells you that. Av = 1 + R1/∞ = 1. (Mathematically the limit value of R1/R2 is 0 as the resistance of R2 approaches open circuit/infinity).
