I'm looking for a simple countdown timer, adjustable from 1-60 sec, turn knob, power on set time with start switch, off when reaching zero.

 

If you don't need a high accuracy timing you can use a 555 monostable circuit with a pot to adjust the time intervals. Otherwise, you will need a digital timer with buttons to set the time.

 

How not accurate will it be? And where can I get a digital timer as you mentioned?
It will be used in a DIY fuel injectors test bench for measuring injectors flow volume in 20 sec. Injectors pulse is 2-6 ms.

 

You can buy a wall wart timer digital timer, like the ones used in the kitchen to turn off appliances after a time interval.
