yup those first ones will do the job according to the company. so i am probably going to go with that one.

 

Here's a schematic of 3 that works in the simulator. And I think this is the one I am going to go with unless someone can see a problem with it?

 

I don't know what exactly the load requirements are for the sensor you'll be getting.

You may need to draw a minimum current, the page says 10kΩ Min load, so explain your circuit and ask them what size resistor to parallel between signal out and ground so the sensor works properly while driving the LM3914s. The datasheet states that each signal in pin draws ~ 5nA, at 5V, this is hundreds of MegOhms. The sensor may need a higher load than that.
