Just about any opamp has a voltage gain of about 200,000 or more which is much too much for a guitar. Negative feedback with two resistors reduces the gain to whatever you need.

Since you don't need voltage gain then what other kind of gain do you need?

Does your guitar have a magnetic pickup? Why do you need to add an opamp?

If by " big enough gain for a guitar" you mean to drive speakers, you might look at Apex Technology. They make op amps with outputs rated up to 10 amps at 300 volts.

But really, were you looking to build a practice amp, a headphone amp, or what?

If you want a really good sounding guitar amp, you'll need to look at tube models.
