I am looking for some fun projects that I can do, and learn more about electrical engineering from a functionality point of view, rather than mostly theoretical.

Any suggestions on circuits/projects? Thank you in advance, all advice is appreciated.

I just finished working on a board that controls the brightness of an LED using an FSR. The harder you squeeze the FSR, the brighter the LED gets. I learned a lot about how the output of the circuit is affected by manipulating the values of the resistors.

You might enjoy this project. It's cheap, easy and similar to what you've already dabbled with, but would add some new skills. Learning to use and control a MOSFET is a great skill to have in your toolbox.
