A condenser stores using an electric field.
An introductor stores using a magnetic field.

But what are they made out of?
Why is this at right angles to that?
If a magnet field comes from moving charges, how come a regular magnet has a magnetic field?

As to what the fields are made of, that's a quantum physics question and beyond my expertise to explain.

The direction of the fields are what is observed. I don't know if there's a "why" answer for that either.

A permanent magnet's field is said to be from the orderly arrangement of its atoms which aligns the electrons moving around each atom to form a net magnetic field. In a non-magnetic material the atoms can not be aligned in this manner so the magnetic fields of each atom randomly cancel, leaving no external magnetic field.
