Just wondering what everyone uses to draw figures like this?

I would like that exact diagram for my assignment, but due to copyright issues, I would not be allowed to use it (even if properly referenced). So I'd like to know what software can I use to easily draw diagrams similar to this?

How would you guys use MATLAB to do this? im assuming you would need to have some equations or at least some data points in order to get this. but without many data points, i think it would be hard, if not impossible to get such smooth curves.
