I want a 120V DC. . I am using 230V Domestic AC and converting in to DC, resulting in 325V DC.
Now I want to convert this 325V DC to 120V.

Should I use a buck converter or a potentiometer?

In case of buck converter please guide me with the values of inductor, resistor and capacitor to be used.

Thank u

Sounds like you are just rectifying the mains.

Very dangerous. Why not do what everybody else does and use a transformer before the rectifier? Do you really need 120Vdc as there are many off-the-shelf lower voltage dc power supply modules that will end up safer and cheaper than building yourself.
