Could anybody please explain the principles and Operation of the Capacitive Sensor and probably an application of the Capacitive Sensor.

well,
i have very little experience with capacitive sensor (transducer)
in my field we use it for measuring the level in tanks or displacement measurement.
the basic idea of how a capacitor relates to displacement or any other parameter can be understood by the formula
c = Area*dielectric const/gap
hence by changing any of these properties we can relate a parameter as directly or inversely proportional to capacitance.
change in capacitance then can be detected by using the capacitor in an oscillator ckt and a frequency to voltage converter.
