Just a quick question.... my max output current using one 24v to 0v is

6VA/230v = 0.260mA

Is that right? or does that just calculate the current being pulled of the primary winding?

It's 6VA/24V = 250mA (very close to your 260mA figure), because ((volts * amps) / volts) = amps.
