I'm thinking of using an 11.1V LiPo battery in a project, can anyone tell me the expected open circuit voltage of a fully charged one??

A fully charged O.C. Li_Po cell is 4.2v so you have three in series, = 12.6v.

Lipo come in cells. If you are using a 11.1v LiPo that means it is a 3-cell LiPo.
Each cell has a maximum voltage of 4.2 volts which makes your 11.1v LiPo 12.6 Volts at open circuit.
Note that you should use a charger that is designed to do LiPo charging .
Also the discharge voltage of each cell should not drop below 3.2-3.4 volts to be safe so your 11.1 v LiPo will have a minimum voltage of about 10 volts .
